Summary

The Level 3 Award in Understanding how to Develop a HACCP Plan is for learners to be able to develop and implement Hazard Analysis and Critical Control Point (HACCP) procedures. HACCP is a well-established system of food safety management that all related businesses must adhere to. This qualification covers the importance of prerequisite programmes, HACCP based food safety management procedures, the preliminary processes and development of the HACCP plan using the 7 Codex principles.

 

This qualification enables the learner to develop a HACCP-based food safety management system. Holders of this qualification will have the appropriate knowledge and understanding to be an integral part of a HACCP team and to supervise the operation of a HACCP-based system in the work environment.

 

Assessment

The knowledge and understanding of the candidates will be assessed by a one-hour multiple-choice examination consisting of 30 questions that is split into two parts. Part 1 will contain 20 multiple choice questions and part 2 will contain two scenarios to be completed consisting of a further 10 multiple-choice questions

Level 4 Award in Managing the HACCP System

Duration: 5 Days

Summary

The Level 4 Award in Managing the HACCP System is to develop an understanding of the management of a HACCP-based food safety management system. Holders of this qualification will have the appropriate knowledge and understanding to lead a HACCP team and to manage the implementation of a HACCP-based system in the work environment. The qualification is aimed at supervisors, managers and HACCP team leaders working within an appropriate food business. This Level 4 qualification covers management of the development, validation, implementation, verification, review, and maintenance of a HACCP based food safety management systems using the Codex principles.

 

Assessment

The knowledge and understanding of the candidates will be assessed by a written examination. The examination will consist of two papers; paper A will consist of ten, two-part questions, which have to be answered in 120 minutes; paper B will consist of 1 scenario (containing five questions) to be completed in 90 minutes. The candidate will have a choice of a manufacturing or catering scenario.
