The objective of the Level 3 Award in Supervising Food Safety and Hygiene is to cover those aspects of the supervision of food hygiene and safety required when working in a catering, food manufacturing or retail environment.

 

The qualification will provide learners with a knowledge of food safety and food hygiene. Holders of this qualification will have the appropriate knowledge and understanding to implement food safety management procedures, which will enable them to identify problem areas, to identify hazards to food safety, to recommend solutions, take appropriate action in the light of these hazards and contribute to improvements in food safety practice

Summary

The objective of the RSPH Level 4 Award in Managing Food Safety and Hygiene qualification is to cover all the necessary aspects of food hygiene and safety in depth, providing candidates with a thorough knowledge. For managers and potential managers working in a food environment, whether in hospitality or the manufacturing industry. It concentrates on the need for programmes and procedures to be properly drawn up, introduced, and monitored to ensure full compliance with the legislation. The purpose of this qualification is to provide an in-depth knowledge of food safety and food hygiene. Holders of this qualification will have the appropriate knowledge and understanding of food safety to develop and implement food safety management systems. These topics are regarded by the Food Standards Agency as being important to understanding and maintaining good practice in the handling, processing, and preparation of safe food. It is ideal for individuals wishing to progress from the Level 3 Award in Supervising Food Safety and Hygiene qualifications.

 

Assessment

The examination will consist of two written papers; paper one will consist of 20 short answer questions which have to be answered in 120 minutes; paper two will be assessed by a controlled assignment, which will have to be answered in 120 minutes, these will be linked to the candidates individual work place. All questions on both papers must be answered.

Summary

The qualification is to provide learners with an understanding of why food allergens need to be controlled and strategies for control, such as keeping and making available information about allergen ingredients, reducing cross contamination, improving communication, and providing advice to consumers. Increasing numbers of individuals suffer adverse reactions every year from the ingestion of allergens in food. This number could be reduced if more people involved in the production, preparation and serving of food were aware of the risks to people from food allergens and how to control these risks.
